Description ABSTRACT This research was aimed to test the number of knife’ edge of asam gelugur slicer. The research was conducted to determine the number of knife’ edge to get optimal effectiveness and efficiency of the equipment, the percentage of damaged material and the percentageof material deposited on the equipment. The research was conducted at the Laboratory of Faculty of Agriculture, Agriculture Engineering, University of North Sumatera in Feberuary-March 2016 using non-factorial randomized block design with number of knife’ edges of 1, 2 and 3. Observed parameters were the effective capacity of the slicer, the percentage of damaged material, the efficiency of equipment and the percentage of material deposited on the slicer. The results showed that the number of knife’ edge had significantly affected the effective capacity ang had no effect on the percentage of damaged material, efficiency of equipment and the percentageof material deposited on equipment. The highest effective capacity was obtained on 2 knife’ edges i.e 1132,14 kg/hour with the percentage of damaged material was 15%, efficiency of the equipment was 81,0% and the percentageof material deposited on the equipment was 0,24%. Keywords : Asam Gelugur , Knife Edge, Slicer ABSTRAK   Penelitian ini adalah uji jumlah mata pisau pada alat pemotong asam gelugur (Garcinia Atroviridis griff).Penelitian ini dilakukan untuk mengetahui jumlah mata pisau yang baik hingga mendapatkan efektifitas dan efisiensi alat yang optimal, serta persentase kerusakan pemotongan dan persentase bahan tertinggal yang rendah. Penelitian ini dilakukan di Laboratorium Keteknikan Pertanian Fakultas Pertanian, Universitas Sumatera Utara pada Februari-Maret 2016 menggunakan rancangan acak lengap non faktorial yaitu jumlah mata pisau 1, 2 dan 3 mata pisau. Parameter yang diamati adalah kapasitas efektif alat, persentase kerusakan pemotongan, efisiensi alat dan persentase bahan tertinggal pada alat.Hasil penelitian menunjukkan jumlah mata pisau memberikan pengaruh berbeda sangat nyata terhadap kapasitas efetif alat dan berbeda tidak nyata terhadap persentase kerusakan pemotongan, efisiensi alat serta persentase bahan tertinggal. Jumlah mata pisau yang terbaik dari hasil pengujian ini adalah pada mata pisau 2 yaitu kapasitas efektif alat sebesar 1132,14 kg/jam dengan persentase kerusakan pemotongan 15%, efisiensi alat 81,0% serta persentase bahan tertinggal pada jumlah mata pisau 2 sebesar 0,24%.   Kata kunci: Asam Gelugur , Mata pisau, Pemotong
