Penelitian ini bertujuan untuk mengetahui proses pengolahan kedelai menjadi tahu dan untuk mengetahui nilai tambah serta distribusi dari nilai tambah tersebut dan profitabilitas dari kegiatan produksi tahu yang diproduksi oleh Usaha Tahu Alami. Penelitian ini menggunakan metode studi kasus, dan analisis data dalam penelitian ini adalah kuantitatif. Untuk menjelaskan mengenai nilai tambah usaha, metode analisis yang digunakan adalah metode nilai tambah Hayami. Hasil analisis tersebut menunjukkan bahwa nilai tambah yang dihasilkan dari kegiatan produksi tahu di Usaha Tahu Alami tergolong tinggi. Nilai tambah yang dihasilkan yaitu sebesar Rp 9.104 per kilogram bahan baku kedelai dengan rasio nilai tambah sebesar 50,58 persen. Margin yang dihasilkan yaitu sebesar Rp 10.600 dan kemudian didistribusikan untuk pendapatan tenaga kerja sebanyak 32,7 persen, untuk sumbangan input lain sebesar 14,11 persen dan untuk keuntungan usaha sebesar 53,19 persen. Profitabilitas yang dihasilkan adalah 27 persen yang menunjukkan bahwa dari kegiatan produksi tahu periode Juli 2019, Usaha Tahu Alami mampu menghasilkan keuntungan sebesar 27 persen. Berdasarkan hasil tersebut, dapat direkomendasikan kepada Usaha Tahu Alami agar tetap mempertahankan usahanya, karena nilai tambah yang dihasilkan tergolong tinggi dan mampu memberikan keuntungan dari kegiatan produksi tersebut.Kata kunci : nilai tambah, profitabilitas, tahuThis research aims to know the process of the processing the soybean into a tofu and to find out the value added and to examine the distribution of the value added and the profitability of the tofu production in Usaha Tahu Alami. The research used case study method, and the data were analyzed quantitatively. In order to obtain the value added, data were analyzed using Hayami method. The result shows that the value added generated by Usaha Tahu Alami was high. Based on the analysis, the study found the value added tofu was IDR 9,104,- per kilogram of raw material and the ratio of value added was 50.58 percent. The margin was obtained IDR 10,600 and was distributed for labour income of 32.7 percent, for other current input of 14.11 percent and for company profit of 53.19 percent. The profitability of Usaha Tahu Alami was 27 percent, this shows that tofu production in July 2019, Usaha Tahu Alami able to make profit of 27 percent.
